Mmmmmorning

Here's something fun for the day-two of my favorite Sunday morning breakfast ideas (though they're just as good on a Monday or Thursday)-I hope you all have a great day today

On a really cold day, I enjoy a warm filling breakfast like
Biscuits and Gravy

Biscuits
2 cups all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 cup cold milk (place in refrigerator until needed)
4 tbsp. butter at room temperature.
1 tbsp. sugar

Preheat oven to 450. Mix dry ingredients. Mix in butter and milk and stir until just combined (don't over mix). Drop mix in 1/4 cup increments onto a cookie sheet and bake for 10-15 minutes.

Wanna know a secret? If I'm crunched for time, I just use Grands individually frozen biscuits. They're delish, no one knows the difference, and I'll save the mixing for the gravy.

Bacon Gravy (yeah, you can do sausage, but bacon is so much yummier!)
4 thick slices of bacon
1 cup of milk (+/- to taste)
1/4 cup of flour
salt and pepper to taste

Crisp bacon in a frying pan (about 10 minutes) then remove strips leaving grease in pan. Gradually mix in flour making sure there are no lumps. Add milk and cook until thickened (using more or less milk to change the consistency) then add salt and pepper to taste.

MMMMMMMMMMMMMM biscuits and gravy!

On the sweet side my favorite Sunday breakfast is cheese blintzes. If you've never had these you're missing out!

MrsM's Cheese Blintzes

Crepes
4 eggs
1/4 teaspoon salt
2 cups flour
2 1/4 milk
1/4 cup (1/2 stick) melted butter or margarine

Mix eggs and salt. Add a little bit of flour and mix. Add a little bit of milk and mix. Alternate flour and milk until you've finished using both. Whisk until completely smooth and then add melted butter.

Warm 8 inch pan to medium. Pour 1/4-1/2 cup of mixture into the center of the pan and swirl it around until the batter covers the entire bottom of the pan (it will be thin). Allow it to heat until the crepe solidifies, flip and heat on the other side for about 30 seconds. Set crepes aside to make filling....


Cheese Filling
16 oz (one tub) cottage cheese
3 oz softened cream cheese
4 tbsp sugar
dash of either lemon or vanilla (depending on what goes better with your topping-my favorite topping is raspberry preserves, so I usually use lemon juice)

Mix the cheeses. Add sugar. Dash lemon/vanilla to taste. Put filling into crepes and roll them like a burrito. On low heat, warm both sides of the crepe for about a minute just until the sides turn golden brown. Remove from the heat and top-fruit and chocolate syrup is my favorite, but you can put just about anything, or nothing at all!

well its either pastizzi - maltese cheese cake or pancakes with golden syrup and once in a while i simply love a full english breakfast :)
