3 Minute Summer Staples

I made dinner tonight in 3 minutes, without even turning on the oven (or using a microwave). I do this on a fairly regular basis-especially during the summer when I don't want to heat up the house. "Cooking" this way is super easy, super delicious, and can be super nutritious...it's completely a mom's lifesaver, so I wanted to share some of my favorite 3 minute summer dinners with you!



Summer Salad
(aka George of the Jungle Salad-don't ask, that's just what Monkey named it when he was 3)

Fresh Spinach
Feta Cheese
Grilled Chicken (buy pre-cooked, pre-packaged or use Forman-style grill for fast & cool cooking)
Apple (or strawberry, or raspberry)
Almonds (or Walnuts)
Raspberry Vinaigrette

Chop fruit (and possibly chicken) into peices. Mix all dry ingredients. Top with vinaigrette. Enjoy! (Really good with strawberry lemonade.)



Vegetarian Gyros

Fresh Spinach
Feta Cheese
Tomato (sliced)
Tatziki Sauce
Hummus
Pita Bread

Spread hummus and tatziki on pita bread. Top with spinach, cheese, sliced tomato, and feta. Fold and enjoy! (You can also add the grilled chicken pieces if you don't want it to be meat-free).



Lime Chicken Salad


Green Leaf Lettuce
Grilled Chicken (either marinate with lime and grill, taking more time, or buy prepackaged)
Corn
Kidney Beans
Ranch
Salsa
Lime Juice

Mix lettuce, grilled chicken, corn, and kidney beans together. Splash with lime juice. Top with ranch and salsa. Enjoy! [Eat with or without tortilla chips on the side-you can also replace ranch with sour cream.]


Turkey Cranberry Sandwiches


Deli Sliced Turkey
Cranberry Sauce (fastest if it comes from a can)
Butter
Salt
Pepper
Bread

Butter bread, salt and pepper to taste. Add turkey slices and cranberry sauce (on top). Enjoy! [Serve with broccoli and carrots (with or without ranch dip) to add vegetables to this meal. If you want this to be as adorable as it is delicious, cut them diagonally from each corner and make cute little finger sandwiches.]

We can't have any of the turkey or chicken but that salad is very similar to my favorite (except I use dried cherryies or cranberries instead of fresh fruit-- most of which I am allergic to). The vegetarian gyros had nevver occurred to me. We love gyros and in the past I ahve made them with falafel but it didn't occur to me to try hummus. (Hummus is one of my personal food staples thoguh only some of the kids will eat it some of the time but I bet they would eat it in a gyro if I made the yogurt sauce.)

These all sound delicious! I don't have other mouths to feed, but it's nice to have something easy to throw together for myself without heating up the apartment, too.
